- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. Set aside.
- In a large bowl, beat the sugar, oil, eggs, and vanilla extract until smooth and well combined.
- Stir in the grated zucchini until evenly distributed.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix. If using nuts, fold them in now.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Use fresh zucchini and grate it just before adding it to the batter. Avoid overmixing to prevent a dense loaf. Customize with add-ins like chocolate chips or raisins. Store in an airtight container for up to 3 days or freeze for up to 3 months.
