  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional, for topping)

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
  2. Thinly slice the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
  3. If not already cooked, season the chicken breasts with salt, pepper, and a pinch of oregano. Cook in a skillet with olive oil over medium heat until fully cooked (about 6-7 minutes per side). Shred the chicken using two forks.
  4. In a bowl, mix the Greek yogurt, chicken broth, minced garlic, dried oregano, dried basil, salt, and pepper. Stir in half of the shredded cheddar and mozzarella cheese.
  5. Layer half of the zucchini slices in the baking dish. Top with half of the shredded chicken and half of the cheesy sauce. Repeat with the remaining zucchini, chicken, and sauce. Sprinkle the remaining cheddar and mozzarella cheese on top, followed by the grated Parmesan and breadcrumbs (if using).
  6. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
