  • 2 cups marinara sauce (your favorite brand)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup Italian breadcrumbs
  • 1/2 cup chopped fresh basil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with olive oil or cooking spray.
  2. In a large bowl, combine the cubed chicken with minced garlic, dried oregano, salt, and pepper. Toss until the chicken is evenly coated.
  3. Spread the seasoned chicken evenly in the prepared baking dish. Top with diced onion and pour the marinara sauce over everything, spreading it into an even layer.
  4. In a separate bowl, mix the breadcrumbs with 1/2 cup of Parmesan cheese. Sprinkle this mixture evenly over the sauce layer.
  5. Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil, sprinkle with mozzarella cheese and remaining Parmesan, then bake uncovered for another 5-7 minutes until the cheese is melted and bubbly.
  6. Remove from oven and let rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For extra crispy topping, spray the breadcrumb mixture lightly with cooking spray before baking. You can also add a layer of sliced pepperoni or cooked Italian sausage for additional flavor. If preparing ahead of time, assemble the casserole up to the breadcrumb topping step, cover and refrigerate for up to 24 hours. Add the final cheese layer just before baking.
