Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Fold in oats: Stir in the rolled oats and raisins or chocolate chips (if using) until evenly distributed.
- Scoop and bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature butter for even spreading and perfect texture. Do not overbake; remove cookies when edges are set but centers are still soft. Chill the dough if too sticky to prevent excessive spreading. Customize add-ins like dried cranberries, nuts, or white chocolate chips for variety.
