  • 1 onion, diced
  • 3 cloves garlic, minced

  • 1 cup shredded Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

  1. Cube the chicken breast and season generously with Cajun seasoning. Let it marinate while you prepare the vegetables. Dice the onion and bell pepper, and mince the garlic.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until golden brown, about 5-7 minutes. Remove chicken and set aside.
  3. In the same pot, add onions, bell pepper, and garlic. Sauté until softened, about 3-4 minutes. Add chicken broth and bring to a simmer, scraping any browned bits from the bottom.
  4. Break spaghetti noodles in half and add to the pot along with the cooked chicken. Stir to combine, then cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente.
  5. Stir in heavy cream and Parmesan cheese until well combined. Season with additional salt, pepper, or Cajun seasoning to taste. Garnish with fresh parsley before serving.

Notes

Adjust the Cajun seasoning according to your preference. Start with 2 tablespoons and add more if you prefer extra heat. Stir the pasta occasionally to prevent sticking. If the sauce thickens too much, add a splash of chicken broth.
