  • ½ cup grated Parmesan cheese (optional)

  1. Cook the pasta according to package directions in generously salted water until al dente. Reserve ½ cup of pasta water before draining.
  2. While pasta cooks, prepare the bruschetta topping. In a large bowl, combine cherry tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper. Let the mixture sit for 10-15 minutes to allow the flavors to meld.
  3. Drain pasta and add it directly to the bowl with the tomato mixture. Toss well to coat, adding a splash of the reserved pasta water if needed to create a light sauce that clings to the pasta.
  4. If using, stir in Parmesan cheese and red pepper flakes. Taste and adjust seasoning as needed.
  5. Serve immediately while warm, garnished with extra basil leaves and an extra drizzle of olive oil if desired.

Notes

Use the ripest, juiciest tomatoes you can find. Cherry or grape tomatoes work particularly well because they have concentrated flavor. Let the tomato mixture sit for 10-15 minutes before adding the hot pasta to allow flavors to develop. Don't skip reserving pasta water - the starchy liquid helps create a silky sauce.
