  2. In a small bowl, whisk together maple syrup, both mustards, minced garlic, and olive oil until well combined. The mixture should be smooth and pourable.
  3. Heat a large skillet over medium-high heat. Add a tablespoon of oil if needed, then sear the lamb for 3-4 minutes per side until golden brown. For thicker cuts, you might need an additional minute per side.
  4. Reduce heat to medium. Brush the maple mustard glaze generously over the lamb, reserving about 1/4 of the mixture. Cook for another 2-3 minutes, flip, and brush with remaining glaze.
  5. Continue cooking until the lamb reaches your desired doneness and the glaze has caramelized into a beautiful glossy coating. Internal temperature should reach 145°F for medium.
  6. Remove lamb from heat and let it rest for 5 minutes before slicing. This allows juices to redistribute throughout the meat. Garnish with fresh thyme sprigs and serve immediately.
