- Preheat your oven to 375°F (190°C). Pat the lamb dry with paper towels and season both sides with salt and pepper.
- In a small bowl, whisk together the maple syrup, both mustards, minced garlic, apple cider vinegar, and smoked paprika until smooth.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the lamb for 3-4 minutes per side until golden brown.
- Brush the lamb generously with the maple mustard glaze, reserving about 1/4 cup for later use.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C) for medium.
- Remove from oven and let rest for 5-10 minutes before slicing. Brush with remaining glaze before serving.
Notes
For the best results, let the lamb come to room temperature for 30 minutes before cooking. This ensures even cooking throughout. The glaze can be adjusted to your preference - add a pinch of cinnamon for warmth or a teaspoon of soy sauce for extra umami flavor.
