- Prepare the vegetables and fruit. Wash and dry the strawberries, then remove the stems and slice them into quarters. Wash the cucumber and slice it thinly using a sharp knife or mandoline. If using a regular cucumber, you may want to peel it first and remove the seeds.
- Combine the main ingredients. In a large mixing bowl, gently combine the sliced strawberries, cucumber, and crumbled feta cheese. Be careful not to mash the strawberries while mixing.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. The honey helps to balance the acidity of the lemon juice and creates a smooth emulsion.
- Assemble the salad. Pour the dressing over the strawberry and cucumber mixture and toss gently to coat all ingredients evenly. Add the chopped mint leaves and give one final gentle toss to distribute the mint throughout the salad.
- Serve immediately or chill. This salad is best served immediately, but you can refrigerate it for up to 2 hours before serving if needed. The flavors will meld together beautifully as it chills.
Notes
Choose ripe but firm strawberries for best texture. Use English cucumbers when possible. Don't overdress the salad - the natural juices will combine with dressing. Add mint just before serving to preserve fresh flavor. Salad is best served immediately but can be refrigerated up to 2 hours.
