  1. Prepare the vegetables and fruit. Wash and dry the strawberries, then remove the stems and slice them into quarters. Wash the cucumber and slice it thinly using a sharp knife or mandoline. If using a regular cucumber, you may want to peel it first and remove the seeds.
  2. Combine the main ingredients. In a large mixing bowl, gently combine the sliced strawberries, cucumber, and crumbled feta cheese. Be careful not to mash the strawberries while mixing.
  3. Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. The honey helps to balance the acidity of the lemon juice and creates a smooth emulsion.
