  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

  • 1 large onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 pie crusts (homemade or store-bought)
  • 1 egg, beaten (for egg wash)

Instructions
  1. In a large bowl, combine the cubed beef with flour, salt, black pepper, garlic powder, and onion powder. Toss until the beef is evenly coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the coated beef and sear until browned on all sides. Remove the beef from the skillet and set it aside.
  3. In the same skillet, add the diced onion, sliced carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  4. Pour in the beef broth, grape juice, and tomato paste. Stir in the dried thyme and rosemary. Bring the mixture to a simmer and let it cook for 5 minutes, stirring occasionally.
  5. Return the seared beef to the skillet and add the frozen peas and corn. Stir well to combine. Reduce the heat to low, cover, and let the mixture simmer for 20-25 minutes, or until the beef is tender.
  6. Preheat your oven to 375°F (190°C). Roll out one pie crust and place it in the bottom of a 9-inch pie dish. Pour the beef and vegetable mixture into the crust. Roll out the second pie crust and place it over the filling. Crimp the edges to seal and cut a few slits in the top crust to allow steam to escape.
  7. Brush the top crust with the beaten egg for a golden finish. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Notes

For an extra flaky crust, consider making your own pie dough. If you prefer softer vegetables, you can pre-cook them slightly before adding them to the filling. This pot pie can be assembled ahead of time and refrigerated until ready to bake. Just add a few extra minutes to the baking time if baking from cold. Feel free to add other vegetables like mushrooms or potatoes to make the dish even heartier.
