  • 1 lb beef or chicken sausage, sliced into rounds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • Fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove sausage from skillet and set aside.
  2. In the same skillet, add diced onion and bell pepper. Cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Add rice to the skillet and stir to coat with the oil and vegetables. Toast the rice for 1-2 minutes until slightly golden.
  4. Pour in chicken broth, honey, Cajun seasoning, smoked paprika, black pepper, and cayenne (if using). Stir everything together until well combined.
  5. Return the browned sausage to the skillet and bring the mixture to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  6. Remove from heat and let stand covered for 5 minutes. Fluff with a fork, garnish with fresh parsley, and serve immediately.

Notes

Don't peek while the rice is cooking! Keeping the lid on ensures even cooking. Adjust cayenne pepper to control spice level. Add vegetables like corn, peas, or diced tomatoes during last 5 minutes. Reheats well for meal prep.
