  3. Beat eggs: In another bowl, beat eggs until light and frothy. Mix in oil, sugar, and vanilla. Stir in zucchini.
  4. Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts if using.
  5. Bake: Pour the batter into the prepared loaf pans. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Allow the bread to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
