  • 2 cups fresh pineapple chunks
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 kiwi fruits, peeled and sliced
  • 1 cup seedless grapes, halved
  • 1 mango, peeled and diced
  • Fresh mint leaves for garnish
  • ΒΌ cup honey
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

  1. Wash all fruits thoroughly and pat dry. Hull and quarter the strawberries, peel and dice the mango, slice the kiwi fruits, and halve the grapes. Combine all prepared fruits in a large mixing bowl.
  2. In a small bowl, whisk together honey, fresh lime juice, lime zest, vanilla extract, and sea salt until well combined. The dressing should be smooth and slightly thickened.
  3. Pour the heavenly honey lime dressing over the mixed fruits. Gently toss to coat all fruits evenly with the dressing. Be careful not to crush the delicate berries.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Garnish with fresh mint leaves before serving.

Notes

Choose ripe but firm fruits for best texture. Use freshly squeezed lime juice rather than bottled. Prepare no more than 2-3 hours before serving for optimal texture. Can prepare fruits and dressing separately up to a day in advance and combine just before serving.
