- Preheat your oven to 400°F (200°C). While the oven heats, pat the chicken pieces dry with paper towels and season both sides generously with salt and pepper.
- In a large bowl, toss the quartered potatoes with 2 tablespoons of olive oil, minced garlic, Italian seasoning, paprika, and a generous pinch of salt and pepper. Make sure the potatoes are evenly coated with the seasoning mixture.
- Arrange the seasoned potatoes in a single layer in a large baking dish or oven-safe skillet. Drizzle with the remaining olive oil and spread evenly.
- Place the seasoned chicken pieces on top of the potatoes, skin-side up if using thighs. Sprinkle the grated Parmesan cheese evenly over both the chicken and potatoes.
- Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden brown and tender when pierced with a fork.
- Remove from oven and let rest for 5 minutes. Garnish with fresh chopped parsley and lemon slices if desired before serving.
Notes
Choose Yukon Gold potatoes for best texture, don't overcrowd the pan for crispy potatoes, use fresh garlic for superior flavor, and allow chicken to rest before serving for juicier meat.
