  1. Preheat your oven to 400°F (200°C). While the oven heats, pat the chicken pieces dry with paper towels and season both sides generously with salt and pepper.
  2. In a large bowl, toss the quartered potatoes with 2 tablespoons of olive oil, minced garlic, Italian seasoning, paprika, and a generous pinch of salt and pepper. Make sure the potatoes are evenly coated with the seasoning mixture.
