- Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan, or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed until just combined - be careful not to overmix.
- Slowly pour in the boiling water while mixing on low speed. The batter will be thin - this is normal and creates the moist texture we're looking for.
- Pour the batter into your prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the fudgy frosting. In a saucepan over medium heat, melt the butter. Whisk in the milk and cocoa powder until smooth.
- Remove from heat and stir in the powdered sugar, vanilla extract, and salt. Beat until smooth and glossy.
- Pour the warm frosting over the warm cake as soon as it comes out of the oven. Spread evenly with an offset spatula.
- Allow the cake to cool completely before slicing and serving. The frosting will set up into a delicious fudge-like topping.
Notes
Measure flour accurately by spooning into cup and leveling off, don't overmix the batter, use quality cocoa powder for best flavor, frost the cake while warm for optimal texture, store covered at room temperature for up to 3 days
