  1. Prepare the vegetables and fruit. Wash and thinly slice the cucumbers. Hull and slice the strawberries into even pieces. Chop the fresh mint leaves.
  2. Make the dressing. In a small bowl, whisk together honey, lime juice, olive oil, and sea salt until well combined.
  3. Combine ingredients. In a large salad bowl, gently toss the cucumber slices, strawberry slices, and chopped mint together.
  4. Dress the salad. Pour the dressing over the cucumber-strawberry mixture and toss gently to coat all ingredients evenly.
  5. Add finishing touches. If using, sprinkle crumbled feta cheese over the top and add a grind of black pepper. Serve immediately or chill for 30 minutes to allow flavors to meld.

Notes

For best results, choose firm, ripe strawberries and crisp cucumbers. English cucumbers work particularly well. You can prepare the dressing and chop ingredients up to 4 hours in advance, but wait to combine until just before serving to maintain crisp texture.
