Instructions
- Prepare the vegetables and fruits. Wash and dry the cucumbers and strawberries thoroughly. Thinly slice the cucumbers using a mandoline or sharp knife. Hull the strawberries and slice them into uniform pieces.
- Combine the base ingredients. In a large mixing bowl, combine the sliced cucumbers, strawberries, and red onion. Gently toss to mix without crushing the delicate strawberries.
- Make the dressing. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined. The dressing should be slightly sweet and tangy.
- Assemble the salad. Pour the dressing over the cucumber and strawberry mixture. Add the fresh mint and basil leaves, then gently toss everything together until evenly coated.
- Add finishing touches. If using feta cheese, sprinkle it over the top just before serving. This prevents the cheese from becoming too soft and maintains its texture.
- Serve immediately or chill. For best results, serve the salad immediately. If you prefer it chilled, refrigerate for 15-20 minutes before serving to allow the flavors to meld together.
Notes
Choose ripe but firm strawberries, slice ingredients uniformly, don't overdress the salad, add protein for a complete meal, prepare ingredients separately and combine just before serving for maximum freshness.
