- Prepare the zucchini by cutting off the ends and slicing each zucchini into 1/2-inch thick sticks, similar to French fry shape. Pat them dry with paper towels to remove excess moisture.
- Set up your breading station with three shallow bowls. Place flour in the first bowl, beaten eggs in the second, and in the third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, onion powder, oregano, pepper, and salt.
- Dredge each zucchini stick first in flour, shaking off any excess. Then dip into the beaten eggs, allowing any excess to drip off. Finally, coat thoroughly in the breadcrumb mixture, pressing gently to help the coating adhere.
- Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't overlap. Lightly spray with cooking spray to help them crisp up.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. You may need to work in batches depending on your air fryer size. Serve immediately with your favorite dipping sauce.
Notes
After cutting zucchini, sprinkle with salt and let sit for 10 minutes to draw out excess moisture. Cut zucchini sticks to same size for even cooking. Use combination of panko and regular breadcrumbs for extra crunch. Can be prepared through breading process and refrigerated for up to 2 hours before air frying.
