- Make the simple syrup by combining 1/2 cup sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Remove from heat and add 1/4 cup mint leaves. Let steep for 15-20 minutes, then strain out the mint leaves.
- While the syrup cools, blend the watermelon cubes in a blender until smooth. Strain through a fine-mesh sieve to remove any pulp, pressing with a spoon to extract all the juice.
- In a large pitcher, combine the watermelon juice, fresh lemon juice, mint-infused simple syrup, and 4 cups of cold water. Stir well to combine.
- Taste and adjust sweetness if needed by adding more sugar or lemon juice according to your preference.
- Chill in the refrigerator for at least 1 hour before serving. Serve over ice with fresh mint sprigs for garnish.
Notes
Choose ripe watermelon that feels heavy for its size and has a creamy yellow spot. Gently bruise mint leaves before adding to syrup to release more flavor without bitterness. This lemonade tastes even better when made a few hours ahead to allow flavors to meld.
