  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 green onions, sliced for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, and dried thyme. Cook for 2 minutes to toast the rice and spices.
  4. Pour in chicken broth and diced tomatoes with their juices. Return the cooked sausage to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  5. Remove from heat and let stand covered for 5 minutes. Fluff with a fork, garnish with green onions, and serve hot.

Notes

For best results, use authentic andouille sausage for smoky flavor. Toasting the rice adds depth and prevents mushiness. Adjust Cajun seasoning for preferred heat level. Excellent for meal prep as flavors intensify overnight.
