Instructions
- Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents clumping.
- In a large saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Add the rinsed rice to the pan and stir constantly for 2 minutes until the rice is lightly toasted and coated with oil.
- Pour in the vegetable broth, lemon juice, and add lemon zest, oregano, dill, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- Remove from heat and let the rice stand covered for 10 minutes. This resting period is crucial for achieving that perfect fluffy texture.
- Fluff the rice with a fork, remove the bay leaf, and stir in fresh parsley before serving.
Notes
Use long-grain rice like basmati or jasmine for best fluffy results. Don't lift the lid while cooking to maintain steam. The 10-minute resting period after cooking is crucial for perfect texture. Add lemon juice at beginning of cooking for optimal flavor melding.
