- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, thyme, rosemary, and black pepper.
- Combine wet ingredients: In another bowl, beat the eggs, then add the vegetable oil, Greek yogurt, honey, and vanilla extract. Mix until smooth.
- Fold in zucchini and cheese: Stir the grated zucchini and chopped chives into the wet mixture. Gradually add the dry ingredients, mixing until just combined. Fold in the shredded cheddar and grated Parmesan cheese.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Drain zucchini well to avoid a soggy loaf. For extra flavor, consider adding diced bell peppers, sun-dried tomatoes, or a pinch of smoked paprika. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
