- Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, and all spices in a large bowl
- Cut chicken thighs into thin strips and add to marinade, then refrigerate for at least 2 hours or overnight
- Make garlic sauce by combining Greek yogurt, minced garlic, lemon juice, tahini, olive oil, and salt, then refrigerate until ready
- Grill marinated chicken strips on medium-high heat for 4-5 minutes per side until golden brown and cooked through
- Warm pita bread on grill, spread garlic sauce, add grilled chicken and fresh vegetables, then roll tightly and serve

Marinate chicken for maximum flavor (overnight preferred), slice chicken thinly for authentic texture, cook at high heat for charred edges, both marinade and sauce can be prepared 3 days ahead
